Physico-Chemical Characterization of Tropical Wood Species for Use and Production of Grilling Planks

The objective of this research is to evaluate the possibility use tropical hardwood species (Amburana cearensis and Cedrella fissilis) for grilling plank production. Physical, chemical organoleptic properties were evaluated compared with a well-used wood specie across Europe USA, Western Red Cedar (Thuja plicata). For analysis, three techniques used: hydro distillation, soxhlet head space. Normality test analysis variance (ANOVA) used comparison between Thuja plicata hardwoods. results organoleptic, statistical demonstrated Amburana fissilis on production, no volatile compound present in these being toxic, low apparent density Nerolidol presence, as flavoring agent, enabling their planks.
